SHORT CHAIN PRODUCTS
A RICH TERRITORY
OF PRIMARIES
The agricultural and agri-food sector is one of the driving sectors for the economy of the area in which some large companies and hundreds of micro agricultural and artisan companies find themselves working side by side. The agricultural products of the Langhe have now become famous worldwide (grapes, hazelnuts, etc.) and constitute the primary products of established and very high quality agri-food chains, or of product niches that are still little known, but of absolute excellence. The territory is rich in vineyards, hazelnut groves, pastures, woods and terraces and offers fruits that have made the territory a heritage of all humanity and which attracts visitors from all over the world.
OUR MEMBERSHIP
TO THE PROJECT
For this reason, given the great success achieved by the PSR 2019 project, thanks to a new project (PSR 2014/2020 Piedmont Region Operation 16.4.1 Call 2022) the need to continue focusing on short supply chain products and the perfect synergy created has been confirmed between the Enoteca Regionale del Barbaresco and the members who together make up the ATS. Our company, with its Biological/Biodynamic Sustainability project, fits perfectly into the PSR plans.
Given that monoculture prevails today, with the pros and cons that derive from it, Rivetto has chosen to defend a diversified ecosystem by increasing the surface area dedicated to woods or other crops and becoming aware of the need for change for agriculture in harmony with nature , with the earth and with men.
The key points of the change aimed at enriching the ecosystem therefore consist of planting trees and different plants between the rows, cultivating the vegetable garden, building bird nests. In the past we sought balance in the vineyard, now for the entire ecosystem. For the company this means no chemical weeding, no systemic pesticide treatments, no chemical treatments or fertilizers. Additionally, we plant barley, oats and clover between the rows to revitalize the soil.
Our products, in addition to wine, are different and all certified organic. We produce cugnà , pear and grape juice and corn cakes and the latter are among the products we supply to the Enoteca for events linked to the PSR Filiera Corta.
WINEMAKER'S CORN CAKES
The Rivetto family has been dealing with grapes and vineyards for four generations. The first was great-grandfather Giovanni, who in 1902 founded a shop in Montaldo Scarampi that specialized in the exchange of grapes and wines. In 1922, Ercole, the son, moved to Alba, where he transformed the family business, starting to make wine. In the following years, the company expanded with new acquisitions of land and farms. Today Enrico leads the company, following a very specific philosophy regarding respect for the environment and self-regulation of the vineyard.

The corn cake is a complex product in the simplicity of the ingredients (all grown biodynamically by the Rivetto company): Spinusa Corn, Rostrato Corn, Pignoletto Corn, Pearl White Corn, 8 Row Corn and salt combined give a wealth of aromas and a unique crunchiness. They also have a high fiber content, the cereals are strictly wholemeal, no additives, preservatives or colorings are added and they are gluten-free.
The biscuits are perfect as a healthy snack and complementary to a wine tasting. During tastings in the wine shop they perfectly accompany Barbaresco, but you can also dare to use them more daringly by dipping them in dark chocolate, mixing them with dried fruit to create energy bars, spreading them with cream cheese and olives: in short, let your imagination run free!
